I was about to start by writing “I love muffins”, but then I would probably write the same for cupcakes and cakes and for almost everything else!
And is there any difference between cupcakes and muffins, other than size? Apparently you can have a muffin for breakfast but not a cupcake. I honestly don’t know the difference, but I love to bake and eat both.
Banana Muffins
Ingredients
- 1 cup (110 grams) walnuts or pecans
- 1 3/4 cups (230 grams) all-purpose flour
- 3/4 cup (150 grams) granulated white sugar
- 1 teaspoon (4 grams) baking powder
- 1/4 teaspoon (1 gram) baking soda
- 1/4 teaspoon (1 gram) salt
- 1 teaspoon (2 grams) ground cinnamon
- 2 large (100 grams) eggs, lightly beaten
- 1/2 cup (113 grams) unsalted butter, melted and cooled
- 1 1/2 cups (300 grams) mashed bananas (you will need 1 pound or 450 grams of bananas (skins on) which is 3 large bananas)
- 1 teaspoon (4 grams) pure vanilla extract

- Custard:
- 3 large eggs, at room temperature
- 2/3 cup (135 grams) granulated white sugar
- 1 teaspoon (4 grams) pure vanilla extract
- 2 tablespoons (25 grams) butter, melted and cooled to room temperature
- 3/4 cup (180 ml/grams) whole (full fat) milk, at room temperature
- 3/4 cup (180 ml/grams) heavy whipping cream, at room temperature
- 1/4 teaspoon (1 gram) salt
- 1/4 teaspoon ground cinnamon (optional)
- Fruit: (Optional)
- 1 small peeled and cored apple, diced
- 1/2 cup (50 grams) dark or golden raisins
